Connect sanitation to food-safety management
The ice system includes maker, bin, transport container, scoop, cart and display handling. Assign procedures and records for each. Follow current manufacturer instructions for descaling, cleaning and sanitizing, and integrate them with the store’s food-safety plan. Ice supporting a display does not replace required refrigeration, temperature control or product rules. Investigate recurring soil, off odor, wet ice or drainage issues rather than normalizing them. Train multiple shifts to report abnormalities and restrict access when equipment is being serviced or contamination is suspected.
Evaluate capacity, service and business continuity
An empty seafood display or closed beverage station has a direct sales cost. Ask vendors for local authorized service, typical parts support and preventive options. Keep the full model and serial number, current manual, installation record and maintenance log together.
