Sanitizing follows successful cleaning and is designed to reduce microorganisms on the prepared surface. It depends on the correct product, concentration, temperature if specified, coverage, and contact time. An employee who sprays and immediately wipes may not deliver the required exposure. A stronger solution may be unsafe and can leave residues or harm components. Never mix sanitizer with delimer, bleach with acid, or any products unless the official instructions explicitly direct it. Prepare fresh solution as required and use test methods when the product or local procedure calls for them.

The controlled sequence

A sound job begins by safely stopping production, protecting or discarding ice as directed, and isolating energy only as the manual specifies. The worker then completes the machine’s clean or descale sequence, removes permitted parts, cleans those parts and identified surfaces, rinses when required, applies sanitizer, observes contact time, reassembles correctly, and returns the machine to service. Some instructions require discarding initial batches. Others incorporate circulation phases. Clean corners, baffles, gaskets, and approved drain-access areas without pushing debris deeper into the drain. A dispenser adds chutes, levers, touch points, and internal paths. Follow its own instructions as well as the ice maker’s. If the head and bin come from different manufacturers, the project may require two procedures rather than one generalized checklist.

Verification and records

A completed cycle light does not prove every manual task occurred. The record should name the machine, date, person, chemicals, dilution or measured concentration, observed condition, damaged parts, filter work, and release back to service. Supervisors can verify that labels are readable, chemicals are in date, measuring equipment is available, and staff can explain the difference between clean and sanitize. After repair, clarify whether a complete cleaning and sanitizing process is required before the machine makes service ice again.

Common mistakes to prevent

Do not mix chemicals, guess concentrations, use household products, scrub coated surfaces with metal, return removed ice, or shorten contact time. Do not assume clear rinse water proves chemical removal when the instructions require a specified rinse sequence. Keep product labels and safety information available, and store chemicals away from food and ice. If an employee cannot identify which solution is cleaner and which is sanitizer, pause the job for training. A written, model-specific checklist is a better safeguard than relying on bottle color or memory.

Build a record the next person can use

Keep the full model and serial number, current manual, installation record and maintenance log together. Record air and water conditions when performance matters, the exact symptom or decision, and the evidence used. A dated note is more useful than a vague memory that the machine “always did that.” If an operating assumption changes, update the sizing and cost worksheets rather than forcing the original conclusion.

Before acting, ask what would disprove the current diagnosis or recommendation. A measured production test can disprove a capacity guess; a specification sheet can disprove an electrical assumption; a site inspection can expose a blocked service panel or impossible gravity drain. This evidence-first habit reduces parts swapping, unsuitable purchases and repeated downtime.
